Easy Mexican Chicken

  • 2 boxes Stuffing mix
  • 4 Chicken breasts
  • 2 cups Salsa
  • 2 cups Cheddar cheese, mild
  • Make stuffing mix according to package directions, then put in a 9 x 13 baking dishes. Place chicken breasts on top on stuffing, then pour salsa on top of chicken then top with cheese. Bake 375^ for 40 minutes.

    You can fit additional chicken breasts in the baking dish, and not adjust the quantities of the other ingredients. I did this with one box of stuffing and 1 cup each salsa and cheese with 2 chicken breasts, in an 8x8.. Then had extras show up for dinner! oh well!
