Almond Sauce

  • 2 cups Oil
  • 2 tablespoons Onion, minced
  • 1 clove Garlic, crushed
  • 1/4 cup Tomato sauce
  • 1 tablespoons Vinegar
  • 3/4 cup Chicken broth
  • 1 tablespoons Parsley, minced
  • 1 tablespoons Sugar
  • 1/2 cup Blanched almonds, chopped
  • 1/2 cup Dry French bread, cubed
  • Saute onion and garlic in oil until light golden, add bread cubes and almonds and saute another minute. Remove from heat, put in a blender with half of the broth and blend to a paste consistency. Putin a saucepan, add all other ingredients, blend well and simmer for a few minutes. Serve with meet, chicken or fish.
