Fish In Orange Juice

  • 4 Fish filets
  • ~ Salt and pepper to taste
  • 1/4 cup Lime juice
  • 4 tablespoons Olive oil
  • 2 Scallions, minced
  • 1 small Clove garlic, crushed
  • 1/2 cup Orange juice
  • 1 large, very ripe Tomato, peeldel, seeded, chopped
  • 2 tablespoons Pimiento (canned), diced
  • 2 tablespoons Capers, drained and chopped
  • 2 tablespoons Dry sherry
  • Put fish in a shallow dish, sprinkle with salt, pepper and lime juice on both sides and let stand for 15 minutes. Grease a shaloow baking dish with some of theoil, place fish on top, combine scallions, garlic, tomato, pimiento and capers and spread the mixture on top of the fish filets. Sprinkle with remaining oil and bake in 350° oven for 10 minutes. Thenpour orange juice and sherry over fish and bake another 10 to 15 minutes or until fish is done.
