  • 6 tablespoons Butter, melted
  • FILLING ~
  • 12 ounces Chocolate chips
  • 5 Egg yolks
  • 3 tablespoons Brandy
  • 1 1/2 cups Whipping cream
  • Combine chocolate crumbs and butter, line the bottom and sides of a springform pan. Chill.

In food processor or blendercombine chips, yolks and brandy. Bring whipping cream just to a boil and add tochip mix with motor running. Blend one minute. Pour into crust and chill at least six hours.

Variations: Lemon or orange peel may be added to filling. Mint chocolate chips may be substituted. Mint liqueur may be substituted for brandy.

WWCvariations: Chocolate graham cracker crumbs work as well. I pre soften the chocolate chips in a microwave, place in a kitchenaid bowl and whip in the egg yolksand brandy, then add the hot whipping cream and whip to blend. I have substituted the mint liqueur and add crushed peppermint candy on the top for a mint version. Usually spread cool whip on top before serving.
