Greek Mashed Potatoes

  • 5 pounds Potatos
  • 6 Garlic cloves, peeled
  • 1 cup Heavy cream
  • 1 stick Butter, unsalted
  • 6 ounces Feta cheese
  • 1/4 cup Chives, fresh, chopped finely
  • ~ Salt and pepper to taste
  • Peel and cube the potatoes. Combine potatoes and garlic with enough salted coldwater to cover. Simmer until tender, drain and mash.

    While the potatoes are cooking warm the cream and butter, add to the mashed potatoes along with the Feta and chives, stir to combine. Salt and pepper to taste.Serves eight.
