Salads and Dressings

Marshall Salad

  • 2 medium Heads Romaine or other Luttuce
  • 1 Lemon, squeezed
  • 3 Garlic cloves, crushed
  • ~ Salt and pepper to taste
  • 3/4 cup Salad oil
  • 1/4 pounds Bacon, crisp, chopped
  • 2 cups Cherry tomatoes, halved
  • 1 cup Swiss cheese, grated
  • 2/3 cup Slivered toasted almonds
  • 1/3 cup Parmesan cheese
  • 1 cup Croutons
  • Wash, dry and tear romaine into bite size pieces. Store in a plastic bag in refrigerator until needed.

    Combine lemon juice, oil, garlic, salt and pepper. Let stand covered for at least 3 hours.

    At the last minute combine all ingredients and toss with dressing, sprinkle on croutons and serve immediately
