Banana Bread

  • 3/4 cup Sugar, granulated
  • 1/2 cup Margarine or butter softened
  • 2 Eggs
  • 2 medium Bananas, mashed
  • 1/3 cup Milk
  • 1 teaspoon Vanilla
  • 2 cups Flour, all-purpose, unbleached
  • 1/2 cup Nuts, chopped (if desired)
  • 1 teaspoon Baking soda
  • 1/2 teaspoon Salt
  • Heat oven to 350 degrees. Grease bottomonly of 9"x5" or 8"x4" loaf pan. In large bowl cream sugar and margarine until light and fluffy. Beat in eggs; blend inbananas, milk, and vanilla. In small bowl, combine flour, nuts, baking soda andsalt; mix well. Add to creamed mixture;stir just until ingredients are moisened. Pour into prepared pan.

    Bake at 350 degrees or until toothpick inserted in center comes out clean. Cool in pan 5 minutes; remove and cool completely on wire rack. Wrap and store in refrigerator.

    Makes 1 16 slice loaf.
