Bacon-wrapped Burgers

  • 4 slices Bacon
  • ~ Salt
  • ~ Lemon pepper
  • 1/4 cups Parmesan, fresh, grated
  • 1 tablespoons Onions, minced
  • 2 tablespoons Bell pepper, Green
  • 1 pounds Lean ground beef
  • Cook bacon until limp, about 10 minutes. Drain bacon. Pat beef onto waxed paperinto a 12x8x1/4 inch rectangle. Sprinkle lightly with salt and lemon pepper. Top with parmesan cheese. Combine onion and bell pepper, sprinle over beef. Roll up like a jelly roll, starting from the longest side. Cut into 4 even slices. Wrap each piece with a strip of bacon, secure with tooth picks. Freeze with wax paper between each patty. To serve, thaw overnight in refrigerator. Broil or grill as desired. Makes 4 servings. Recipe is from the book, 'Once-a-Month Cooking,' by Mimi Wilson.
