Focaccia Or Italian Bread Topping

  • 6 tablespoons Olive oil, virgin
  • 4 tablespoons Balsamic vinegar
  • 1 Garlic clove, minced
  • ~ Salt and pepper to taste
  • 1/4 pound Cherry tomatoes, red halved
  • 1/4 pound Cherry tomatoes, yellow halved
  • 6 ounces Cheese, smoked
  • 1/4 cup Basil, leaves
  • In a bowl, whisk together the oil, vinegar and garlic. Season with salt and pepper. Add cherry tomatoes & toss together. Leave at room temperature. Can be prepared several hours ahead. Heat broiler. Place cheese on top of focaccia or half loaf of It. bread (toasted) or slices oftoasted bread. Place under broiler until cheese is melted and crust is golden. Remove from oven and top with tomato mixture and basil. Serve immediately.
