Venison Hard Salami

  • 6 pounds Venison, ground
  • 18 drops Liquid Smoke
  • 10 teaspoons Curing salt
  • 6 teaspoons Garlic salt
  • 6 teaspoons Mustard seed
  • 6 teaspoons Pepper
  • 1/2 teaspoons Red pepper, crushed
  • 1/2 teaspoons MSG
  • Combine all ingredients in a bowl. Mix well, cover and store chilled for 4 days.

    Shape into balls.

    Place on wire racks in baking pans.

    Bake at 150 degrees for 10 hours.

    Drain. Cool. Cut into 1/8 inchslices. Serve with crackers.
