Easy Italian Love Cake

  • 1 package Cake mix, chocolate
  • 3/4 cup Sugar
  • 4 Eggs
  • 1 teaspoon Vanilla
  • 2 pounds Cheese, Ricotta
  • 1 small box Instant chocolate pudding mix
  • 1 cup Milk, cold
  • 1/4 cup Confectioner's sugar
  • 8 ounce Cool Whip
  • Cake: Prepare mix according to pkg. directions and pour into a prepared 9 x 13 pan. Beat together until well mixed: sugar, eggs, vanilla, and cheese. Spoon onto cake batter and spread with a knife. Bake at 350 F. for 60 minutes. As cake bakes, cheese filling sinks to bottom.

    Icing: Beat pudding, milk, sugar. Fold in Cool Whip and spread on cooled cake.
