Butterscotch Dream

  • 2 1/4 cups Rice, cooked
  • 3 dessertspoon Peach jam
  • 2 cups Milk, lukewarm
  • 3 level tablespoons Cornflour
  • 1 level teaspoon Butter
  • 2 Egg yolks
  • 1/2 cup Sugar
  • 1/2 teaspoon Vanilla
  • 2 tablespoons Water
  • Heat sugar and water in saucepan slowlyuntil golden brown.

    Very slowly add warm milk and stir until butterscotch dissolves.

    Mix cornflour with a little extra milk and add to mixture.

    Cook for 3 minutes and stirring until thickened.

    Add butter, beaten egg yokes, vanilla and rice.

    Then pour into a oven proof dish.

    Top lightly with the peach jam.

    Top with meringue, sprinkle a little sugar on top ofmeringue.

    Set and lightly brown in a moderate oven.

    Serves 4 to 6
