Apple And Cabbage Soup

  • 1/2 large White cabbage, shredded
  • 3 medium Onions
  • 1 clove Garlic, crushed
  • 4 large Green apples
  • 1/4 cup Butter
  • 3 pints Chicken stock or vegetable stock
  • ~ Salt & freshly ground black pepper
  • 1 teaspoon Sugar
  • 1 tablespoon Fresh ginger, grated
  • Finely shred the cabbage and slice the onions. Peel and core the apples and cutinto even-sized pieces.

    Melt the butterin a heavy-buttomed pan, taking care not to let it brown. Add the cabbage, onions and apples, and sweat over low heat, tossing the pan frequently. Add the garlic and cover with the cold stock.

    Simmeruntil the cabbage is just tender. Blendin a blender until smooth. Season with salt, pepper and sugar.

    Reheat the soup and serve with a little chopped green ginger in each bowl.

    Makes 4 to 5 servings.
