Cilantro-mint Relish

  • 1/4 cup Red onions, minced
  • 1 tablespoon Fresh ginger, peeled and minced
  • 2 Green chili peppers, minced
  • 1/4 teaspoon Pepper
  • 1/4 cup Fresh mint, minced
  • 1 small bunch Cilantro, minced
  • 1 teaspoon Sugar
  • 1 teaspoon Salt
  • 2 tablespoons Water
  • ~ Juice of 2 limes
  • Combine all ingredients and refrigeratefor at least 2 hours.

    This is very goodserved with grilled salmon.

    makes about1 cup.
