Christmas Pepper Chutney

  • 4 large Red bell peppers, diced
  • 2 Jalapeno peppers, minced
  • 4 cloves Garlic, minced
  • 1 1/4 cups Cider vinegar
  • 1 cup Light-brown sugar, packed
  • 1 cup Granulated sugar
  • 1 cup Golden raisins
  • 1/2 cup Crystallized ginger, finely chopped
  • Place all ingredients in a heavy saucepan. Cook until thickened.

    Makes 4 cups.

    This is good with poultry or pork.
