Bacalao

  • 1 1/2 pounds Bacalao (Dried Cod Fish)
  • 1/2 cup Onions, diced
  • 1/2 cup Green peppers, diced
  • 1/2 cup Tomatos diced
  • 1 tablespoon Garlic, chopped
  • 2 tablespoons Parsley, chopped
  • 2 tablespoons Cilantro, chopped
  • 2 tablespoons Tomato paste
  • 1 cup White wine
  • 2 Eggs
  • ~ Olive oil
  • 1. Cook bacalao, changing water at least three times.

    2. Shred the bacalao and discard the dark pieces.

    3. In a separate pan, sauté the onions, peppers, tomatoes and garlic in olive oil. Then add thetomato paste. Deglaze with the white wine.

    4. Add bacalao.

    5. Cook together forabout 15 minutes.

    6. Add raw beaten eggs in the middle of the stew. Sirring continuously.

    7. Add herbs. Season to taste.
