Cilantro Crusted Pork Loin

  • 1 pound Pork Loin
  • 1/2 cup Flour
  • 1 Eggs, beaten
  • 1/4 cup Parmesan, fresh, grated
  • 1/4 cup Cilantro, chopped
  • 1/4 cup Bread crumbs, fine
  • 1 tablespoon Vegetable oil
  • 3 tablespoons Butter
  • 3 tablespoons Cilantro, chopped
  • 2 tablespoons Lemon juice
  • 1 1/2 tablespoons Soy sauce, dark
  • Cut loin into 1" thick slices.

    Place flour, egg, cilantro and bread crumbs in that order.

    Dredge loin slices in that order.

    Heat oil in pan and fry breaded pork pieces until golden brown......about 2 1/2 minutes per side.

    After cookingall the pork, melt butter in pan. Scrape up any remaining bits.

    Remove from heat and add remaining ingredients.

    Poursauce over pork pieces.
