Buttery Cod Florentine

  • 1 pound Cod fillets, thawed and drained
  • 10 ounces Spinach, frozen, thawed and drained
  • 4 ounces Mushrooms, fresh, chopped
  • 1/2 cup Cheddar cheese, mild, shredded
  • 1/3 cup Butter, unsalted
  • 1 teaspoon Dill weed
  • 1 teaspoon Nutmeg
  • 1/2 teaspoon Hot sauce

    • Place cod in ungreased baking dish.

    Layer with spinach, mushrooms and cheese.

    Melt butter and add seasonings. Pour this on top of cheese.

    Bake at 350º for around 30 minutes.

    For a nice variation, sprinkle crumbled bacon on top before baking.
