Chiles Rellenos Con Queso ( Chilies Stuffed With Cheese)

  • 1/4 pound Monterey Jack Cheese
  • 1 can Whole Green Chilies, (Poblanos)
  • ~ Flour
  • 2 Eggs
  • 2 tablespoons Flour
  • ~ Fat for frying
  • 1/2 medium Onion, chopped
  • 1 large Clove garlic, minced
  • 1 tablespoon Oil
  • 1 cup Tomatoes
  • 2 cups Chicken broth
  • ~ Salt and pepper to taste
  • ~ Oregano
  • TO MAKE THE CHILES

    Cut cheese in rectangles about 1/2-in thick and 1-inch long. Stuff a piece of cheese from the top part of the chile into the cavity and setaside. Seperate the egg whites from the yolk and beat the whites until stiff and hold a peak. Beat the yolks lightly. Fold yolks into the whites then fold in the 2 tablespoons of flour into the egg mixture.

    Roll the stuffed chiles in the flour until coated then dip them intothe egg mixture one at a time. Pick upeach chili with a spoon and transfer toa saucer; Then slide from saucer into about 1-1/2 inches of moderaely hot oil in your frying pan. The saucer keeps the chiles neater and holds more of the egg covering on the chili. Fry until golden brown on each side, but work quickly!. Drain them well on absorbent paper and let stand. Don't worry if the nice puffy coating deflates. It will puff up again when heated in the sauce.

    SAUCE:

    Cook onion and garlic until wilted, in oil. Add tomatoes and press through a strainer. Put in a pot with the chicken stock and bring to a boil, then season to taste with salt, pepper and oregano. Atserving time, heat the chiles in the boiling sauce for about 5 minutes.

    Makes about 8 servings.

    VARIATIONS:

    Chiles may also be stuffed with any cooked meat, cooked Chorizo sausage, fish or with picadillo. Can also be served without the sauce, which some Americans prefer.

    They can also be frozen. When frozen putthem in the oven for abut 10 minutes before putting into sauce.
