Breakfast, Pork Mutton Veal

Farm Style Homemade Sausage

  • 2 pounds Ground lean pork
  • 1 pound Ground salt pork
  • 1 large Onion, finely minced
  • 1 Garlic clove, minced
  • 1 tablespoon Salt
  • 1 tablespoon Rubbed sage
  • 1 teaspoon Ground cloves
  • 1 teaspoon Ground mace
  • 2 teaspoons Coarsely ground peppercorns
  • 1 tablespoon Parsley, minced
  • 1 Bay leaf,crushed
  • 1/4 teaspoon Ground allspice
  • Combine all ingredients and mix thoroughly. Use to stuff sausage casings or form into patties. In either case, pan-fry or bake on a rack until crisp but not dry.

    Makes three pounds sausage.
