Angels On Horseback

  • 1 dozen Oysters
  • ~ Lemon juice
  • ~ Salt
  • ~ Tabasco sauce
  • 12 thick slices Streaky Bacon
  • ~ Watercress garnish
  • Dip the oysters in lemon juice and sprinkle with salt and drop of Tabasco. Cutoff the rind from the bacon, and roll each oyster up in one slice if slices arelong cut in half. Try not to overlap the slices of bacon. Secure with cocktail sticks. Just before serving, place under broiler or hot grill for 4 to 6 minutes, until the bacon is crisp. Do not over cook as the oysters will become tough.

    Serve on a cocktail tray garnished with watercress.

    Make 12 canapes.
