Fried Oysters

  • 2 to 3 dozen Oysters
  • 2 Eggs, beaten
  • ~ Salt & freshly ground black pepper
  • ~ Cornmeal
  • 1/2 cup Butter
  • 1/2 cup Olive oil
  • ~ Lemon wedges
  • Shuck oysters. Combine beaten eggs anda little milk in a bowl. Season to taste with salt and freshly ground black pepper. Dip oysters in egg mixture, then in cornmeal and allow to set on kitchen paper or foil for about 5 minutes beforecooking.

    Melt butter in a large, thickbottomed frying pan or deep-fryer. Addolive oil; bring to frying temperature and cook oysters in fat until they are golden brown. Serve immediately with wedges of lemon.

    Makes 4 to 6 servings.
