Salads and Dressings

Basic Fennel Dressing

  • 1/2 cups Extra Virgin Olive Oil
  • 1/2 cups Peanut oil
  • 1/2 cups Red wine vinegar
  • 1/2 cups White vinegar
  • 1 teaspoons Sugar
  • 1 tablespoons Dry mustard
  • 1 teaspoons Fennel seed, crushed
  • 2 tablespoons Lemon juice
  • 1/8 teaspoons Dried parsley flakes
  • ~ Salt and pepper to taste
  • Blend the oils and the vinegars. Add alittle sugar, mustard, and fennel. Addsome lemon juice, parsley, salt and pepper.

    Makes 2 cups.
