Hummingbird Cake

  • 3 cups Four, All Purpose
  • 2 cups Sugar
  • 1 tsp Salt
  • 1 tsp Soda
  • 1 tsp Cinnamon
  • 3 beaten Eggs
  • 1 1/2 cups Salad oil
  • 1 1/2 tsp Vanilla
  • 8 oz can crushed Pineapple
  • 2 cups chopped Nuts
  • 2 cups mashed Banana
  • Combine dry ingredients in large bowl.Add beaten eggs and salad oil, stirringby hand until dry ingredients are moistened. ** (Do not use mixer)** Stir in vanilla and pineapple, nuts and the banana. Spoon batter into 3 well greased and floured pans, and bake. Cool in the pan 10 minutes, then remove from pan and cool completely.

    Frost with Cream Cheese Frosting.
