Cheesy Enchiladas

  • 2 cups Cheese, Cottage
  • 1 cup grated Cheese, Monterey Jack
  • 1 can chopped Chilies
  • 1 beaten Egg
  • 1 tsp Chili powder
  • 1/2 tsp Salt
  • 1/2 tsp Paprika
  • 8 to 10 Tortillas
  • 1 can Enchilada sauce
  • 2 cups grated Cheese, Cheddar
  • ~ Sour Cream
  • Chopped Onion, Green
  • 1. Mix together cottage cheese, jack cheese, chopped chilis, egg and seasonings.

    2. Microwave tortillas on high for 30-45 seconds. Place 1/3 cup filling oneach tortilla. Roll up jellyroll fashion.

    3. Place tortillas, seam side down,in a baking dish. Cover with enchiladasauce.

    4. Sprinkle with cheddar cheese. Microwave on high for an additional 1-2 minutes.

    5. Garnish with sour creamand green onions.

    Yeilds 4-6 servings.

    ** If desired may also add refried beans to filling.
