Cheese Calzones
When basic dough has risen, roll out ona floured surface and cut into circles about 8 inches.
Put eggs in a bowl andricotta, parmesan, and salt. Mix well.
Cut mozz cheese in small cut in cubes and the prosciutto in 1/2 inch strips.
In center of each circle of dough place some egg-cheese mixutre and cheese mixture.

Fold dough over to form a crescentand seal edges well. Brush top of eachcalzone with oil, place on lightly oiled baking sheet and bake 450º for 25 minutes. Or until edges are toast colored and tops are golden.
Serve hot with knife and fork.
