Basic Quiche

  • 2 Eggs + 2 egg yolks
  • 1/2 tsp Salt
  • 1/2 tsp Nutmeg
  • 1/2 tsp White Pepper
  • 1 cup Whole Milk
  • 1 cup Half & Half
  • 1 standard Pie Crust
  • 1 1/2 cups Cooked Bacon-diced
  • 1 1/2 cups Cheese, Swiss shredded
  • 1. Add eggs, egg yolks, salt, nutmeg, and white pepper to a large bowl and mixwell. Stir in milk and half & half.

    2. Take a standard frozen pie crust and sprinkle enough bacon to cover bottom. Cover the bacon with cheese.

    3. Pour the liquid into the pie crust and bake 350º for 30 minutes or until top of quicheis firm.

    Variation:: Can also use whole wheat bread for a mini quiche. Cut off outer crust and butter muffin tins. Firmly press bread into cups. Bake empty shells for 6 minutes 350º. Then sprinkle some cooked bacon and shredded cheese into toasted shells. Fill with quiche mixture and bake 15 more minutes.
