Cream Cheese Cupcakes

  • Package Vanilla wafers
  • Package Midget size paper baking cups
  • 2 - 8oz Pkg Cream Cheese
  • 3/4 cup Sugar
  • 2 large Eggs
  • 1 teaspoon Vanilla
  • 1 can Pie Filling
  • Put wafers into baking cups. Mix cream cheese, sugar, eggs, and vanilla untilsmooth. Fill baking cups about 3/4 wayfull.

    Bake at 375º for 20 minutes. Cool and then top with pie filling.

    ** While cooking cupcakes will "drop" down into cups thus allowing room for pie filling.

    Can be frozen when completed.
