Granny Austin's French Bread

  • 1 cup Warm water
  • 1 teaspoon Sugar
  • 1 package Dry active yeast
  • 1 tablespoon Salt
  • 4 tablespoons Oil
  • 2 tablespoons Sugar
  • 4-5 cups Plain Flour
  • Sprinkle Yeast in 1 cup water+1 tsp sugar. Let stand for 10 minutes. Mix flour, 2 Tbsp sugar and salt. Add yeast mixture and mix. Place on floured board and knead, adding more flour if needed. So dough is smooth and elastic. Oil a bowl well and turn dough until all sides are coated. Cover with clean dry cloth. Let rise until doubled. Punch down and divide into 2 parts. Form each half into a cigar shape loaf.

    Grease pan. Sprinkle well with corn meal and place loaves in pan. Cover with the clean clothand let rise again. Until doubled in size. (In a warm draft free place; you can put it over a pan of very hot waterinside the oven 1 hr.

    Heat oven to 350degrees. Cut slits in loaves about 2 inches apart. Bake 30 minutes.
