Apple Pie Filling

  • 6 pounds Apples, peeled, sliced
  • 4 1/2 cups Sugar
  • 1 cup Corn starch
  • 2 teaspoon Cinnamon
  • 1/2 teaspoon Nutmeg
  • 1 teaspoon Salt
  • 10 cups Water
  • 4 teaspoons Lemon juice
  • Cover apples with cold water and 1 tablespoon of fruit fresh, set aside. In 2 qt pan, combine the rest of ingredients. cook and stir until thick and bubbly. Put apples in 6-quart jars. Don't overfilljars with apples. Pour hot mix over apples. Screw on lids and bands. Process ina boiling water bath for 20 minutes.
