Old-fashioned Rice Pudding

  • 4 1/2 cups Milk
  • 1/2 cup Long grain rice, uncooked
  • 1/3 cup Sugar
  • 1/2 teaspoon Salt, opt
  • 1/2 cup Raisins
  • 1 teaspoon Vanilla
  • ~ Cinnamon or nutmeg, opt
  • In a saucepan, ccombine milk, rice, sugar and salt; bring to a boil over mediumheat, stirring constantly. Pour into greased 1 1/2 qt baking dish. Cover and bake at 325 for 45 minutes, stirring every15 minutes. Add raisins and vanilla. Cover and bake an additional 15 min. Sprinkle with cinnamon or nutmeg. Serve warm or chilled.
