Bittersweet Chocolate Pound Cake

  • 2 cups Flour
  • 1 teaspoon Baking soda
  • 1 teaspoon Baking powder
  • 1 1/2 cups Water, boiling
  • 4 bars (8 oz) Unsweetened baking chocolate, divided
  • 2 cups Sugar
  • 1 cup Butter or margarine, softened
  • 1 teaspoon Vanilla
  • 3 Eggs
  • 3 tablespoons Butter or margarine
  • 1 1/2 cups Powdered Sugar
  • 2-3 tablespoons Water
  • 1 teaspoon Vanilla
  • In small bowl, combine flour, soda and baking powder. Combine boiling water and3 bars (6 oz) of baking chocolate, stiruntil smooth. Beat sugar, 1 cup butter and vanilla until creamy. Add eggs, beaton high speed for 5 minutes. Beat in flour mixture alternately with chocolate mixture. Pour into a well greased 10 inchbundt pan. Bake 325 for 50-60 minutes or until toothpick comes out clean. Cool for 30 minutes, invert on to a platter. Cool completely.

    GLAZE

    In small saucepan melt 3 tbs butter and remaining chocolate over low heat, stirring until smooth. Remove from heat, stir in powdered sugar alternately with water until desired consistancy, stir in vanilla. Drizzle over cake.
