Spinach Salad

  • 1 package Spinach, fresh
  • 1 head Lettuce
  • 1 small Red onion, sliced
  • 3/4 pound Mushrooms, fresh, chopped
  • 3/4 cup Cottage cheese, small curd, drained
  • 1/2 pound Bacon, fried crisp
  • Tear spinach and lettuce into small pieces, crumble in bacon, add all other ingredients and toss. Add Poppy Seed Dressing.

    Poppy Seed Dressing:

    1 cup Oil

    1 cup White vinegar

    1/2 cup Sugar

    1 tablespoon Poppy seeds

    1 tablespoon Minced onions

    1 teaspoon Salt

    1 teaspoon Dry mustard

    Combine all ingredients. Shake well and pour over salad before serving.
