Apricot Nut Bread

  • 2/3 cups Apricots, dried, chopped
  • 1/4 cup Hot water
  • 1/2 cup Nuts, chopped
  • 2 cups Flour, all-purpose
  • 1 cup Sugar
  • 1/2 teaspoon Baking soda
  • 2 teaspoons Baking powder
  • 1 teaspoon Salt
  • 1 Eggs
  • 1/2 cup Orange juice
  • 2 teaspoons Butter
  • Pour hot water over apricots, let soak for 30 minutes. Mix dry ingredients. Add soaked apricots and nuts. Add orangejuice, butter and egg. Stir until all ingredients are moist. Bake in a greased and floured pan at 350º for 1 hour and15 minutes. Test for doneness. (Delicious toasted and buttered) Recipe from Mary Scott, Deer Park TX
