Fresh Tomato Sauce

  • 2 large Tomatoes
  • 3 cloves Garlic, minced
  • 1/3 cup Fresh parsley, minced
  • 2 tablespoons Lemon juice
  • 1/2 teaspoon Marjoram
  • ~ Salt and pepper to taste
  • 1/4 cup Hot water
  • Peel tomatoes by dipping in boiling water for 15 seconds or by pouring boiling water over top of them. If peel does not slip off easily, repeat procedure.

    Microwave Oven Directions: Chop peeled tomatoes fine and place in a glass mixing bowl. Add remaining ingredients, blending well. Cover bowl with plastic wrap and cook on high for 3 minutes, or until mixture boils. Reduce setting to mediumand continue cooking for 12 minutes longer. Stir well and adjust seasonings. Use as a sauce for baked fish.

    Conventional Directions: Chop peeled tomatoes and place in a saucepan with the remaining ingredients. Bring to a boil, reduce heat, and simmer gently for 30 minutes.Taste to adjust seasonings. Yields 1 1/2 cups
