Beef with Black Bean Sauce

  • 750 grams Rump steak
  • 1 Egg whites
  • 1 tablespoons Sherry, dry
  • 2 tablespoons Soy sauce, light
  • 1 teaspoon Cornflour
  • 1/3 cup Oil
  • 4 Shallots
  • 1 Red peppers
  • 1/3 cup Sliced bamboo shoots
  • 1 teaspoon Curry powder
  • 1 tablespoon Black beans
  • 1/3 cup Water
  • 2 teaspoons Cornflour
  • ~ Pinch of salt
  • 1. Trim away any fat from steak. Cut steak into 5cm strips. Combine in bowl with egg white, sherry, soy sauce and cornflour, mix well. Stand 30 mins.

    2. Put beans in a bowl, cover with water, stand 15 minutes, drain and rinse under cold running water Put on to plate, add sugar and one teaspoon water, mash well. Chop shallots, cut pepper in half, remove seeds, cut each half into thin strips.

    3. Add two tablespoons oil to pan or wok, addshallots, red pepper, bamboo shoots andcurry powder, saute two mins, remove from wok. Heat remaining oil in wok, add meat and marinade, cook untill browned.

    4. Return vegetables to pan with bean mixture, combine well. Blend extra cornflour with remaining water, add to wok, stir untill mixture boils and thickens. Serves 4.
