Honeyed Chicken

  • 2 Chicken breasts
  • 3 ounces Butter
  • 4 Shallots
  • 1 teaspoon Ginger, fresh, chopped
  • 1 tablespoon Honey
  • 1 tablespoon Soy sauce, light
  • 1/2 teaspoon Salt
  • 1/2 cup Sherry, dry
  • Method: Melt butter in baking dish, addchicken, brush well with butter, bake in moderately hot oven 45 mins; baste frequently with the butter. Pour sauce overchicken, continue cooking for further 30 mins, or until tender and golden brown. Baste chicken frequently with sauce during last 30 mins.

    Sauce: Chop shallots finely,combine with remaining ingredients.
