Cucumber Tuna Boats

  • 3 medium Cucumbers
  • 1 can Tuna
  • 2 large Eggs, hard-boiled
  • 1/2 cup Cheddar cheese, mild, shredded
  • 1/2 cup Celery, diced
  • 1/4 cup Mayonnaise, Fat Free
  • 2 tablespoons Pickled relish
  • 1 tablespoon Onions, chopped
  • 1 teaspoon Lemon juice
  • Cut cucumbers in half, lengthwise. Remove and discard the seeds. Cut a thin slice from the bottom of cucumber if neccessary so that it sits flat. In a bowl, combine the remaining ingredients. Spoon into the cucumber.
