Cheese Blintzes
For the batter:
Beat 6 eggs and mix together with flour, water and salt.
For filling:
Drain cottage cheese and mix together with eggs, sugar and salt
Coat an8 inch skillet with non-stick spray. Pour 1/4 cup batter and coat the pan. Cook one side only until the edges begin to curl, about 20-30 seconds. Place on wax paper and repeat until finished.
Place 2-3 TBS of filling along one edge of crepe and roll up.
Melt 1 TBS of butterin skillet and brown crepes, 8 at a time, for about 1-2 minutes per side.
