Lemon Frosting

  • 4 tablespoons Margarine
  • 1 Egg yolk
  • 1 teaspoon Lemon peel, grated
  • 2 tablespoons Lemon juice
  • 1/4 teaspoon Salt
  • 3 1/2 cups Confectioners' sugar
  • 2 tablespoons Water
  • 1 dash Yellow food coloring
  • Place margarine and egg yolk in mixer bowl and attach beaters. Beat on medium speed until light and fluffy. Add lemonpeel, lemon juice, water, food coloringand salt and beat about 2 minutes longer. Reduce mixer speed to low. Add about 1 cup sugar and mix until combined. Increase speed to medium and beat until smooth. Continue adding sugar in the same manner until frosting reaches proper consistency.

    Yields 2 cups.
