Lemon Frosting
Place margarine and egg yolk in mixer bowl and attach beaters. Beat on medium speed until light and fluffy. Add lemonpeel, lemon juice, water, food coloringand salt and beat about 2 minutes longer. Reduce mixer speed to low. Add about 1 cup sugar and mix until combined. Increase speed to medium and beat until smooth. Continue adding sugar in the same manner until frosting reaches proper consistency.
Yields 2 cups.
