Nora's Potato Rolls

  • 1 package Yeast
  • 1/4 cup Water, hot to wrist but not burning
  • 1/2 cup Mashed potatoes
  • 1/4 cup Shortening
  • 1/4 cup Sugar
  • 1 1/2 teaspoon Salt
  • 1 cups Milk, scalded
  • 1 Eggs
  • 4 to 4 1/2 Flour
  • Soften yeast in warm water. Combine potatoes, shortening, sugar, salt and hot milk. Cool to lukewarm. Add softened yeast and egg. Stir in 2 cups of flour; beat well. Stir in remaining flour to make soft dough. Knead on lightly floured surface til smooth and elastic. (8 to 10 mins) Place in lightly greased bowl,turning once to grease surface. Cover,let rise until double (1 hr). Punch down, cover and let rest 10 minutes. Shape into balls. Place in pan and let riseuntil double. Bake in hot oven (400°)10-12 minutes. Makes 2 dozen.
