Angelina's Lemon Cookies (Sicily 1911)
Cream shortening and sugar together. Beat in eggs one at a time. Add lemon extract. Sift flour and baking powder together. Add to wet ingredients, alternating with milk. Roll into balls and bake at 425° for 7 minutes. When cool, frostand add sprinkles. To make frosting, mix confectioners sugar, salt, vanilla.Adding cream until you get a good thickconsistency.
You can substitute Anise flavoring for the lemon extract.
