Angelina's Lemon Cookies (Sicily 1911)

  • 1/2 cup Crisco
  • 1 1/3 cups Sugar
  • 3 Eggs
  • 1 1/2 teaspoons Lemon extract
  • 3 heaping teaspoons Baking powder
  • 4 cups Flour
  • 1 cup Milk
  • ~ Frosting
  • 1 cup Confectioner's sugar
  • 1/4 teaspoons Salt
  • 1/2 teaspoon Vanilla
  • 1 1/2 tablespoon Cream
  • ~ Sprinkles
  • Cream shortening and sugar together. Beat in eggs one at a time. Add lemon extract. Sift flour and baking powder together. Add to wet ingredients, alternating with milk. Roll into balls and bake at 425° for 7 minutes. When cool, frostand add sprinkles. To make frosting, mix confectioners sugar, salt, vanilla.Adding cream until you get a good thickconsistency.

    You can substitute Anise flavoring for the lemon extract.
