Catfish Provencale

  • 1 medium Onions, chopped
  • 2 cloves Garlic, finely minced
  • Tablespoon Olive oil
  • 1 Zucchinis julienne
  • 2 medium Tomatoes, seeded and diced
  • 2 tablespoons Italian parsley, chopped
  • 2 tablespoons Tomato paste
  • 1/2 teaspoon Basil
  • 1/2 teaspoons Oregano
  • ~ Salt and pepper to taste
  • 1/8 teaspoons Thyme
  • 1 pound Catfish fillets
  • Saute onion & garlic in oil. Stir in zucchini, tomatoes, parsley, tomato paste, seasonings. Simmer 10-15 min. Pour half sauce on bottom of 8-inch square baking dish. Plce filets on top of this sauce. Spoon remaining sauce over fish. Cover with foil. Bake 15-20 min. at 400degrees, until done.
