Pork with Roasted Red Peppers & Potatoes

  • 4 Pork chops
  • 1 teaspoon Olive oil
  • 1 teaspoon Oregano, dried
  • 4 medium Potatos, red
  • 1 Onion, sliced
  • 1 cup Chicken broth
  • ~ Black pepper
  • 1/2 cup Red peppers, roasted
  • Season chops with pepper. Brown chops in oil, 10 min. Remove. Add potatoes, onion, oregano. Cook 5 min., stirring occasionally. Add chops, broth, and peppers. Heat to boil. Cover and cook overlow heat 5 min.
