Green Beans with Sun-Dried Tomatoes

  • 1/3 cup Tomatoes, sun-dried
  • 1/4 cup Water
  • 1 pounds Green beans
  • 3 tablespoons Water
  • 4 tablespoons Italian dressing (light)
  • In a small bowl, soak tomatoes in water. Set aside. Snap off ends of green beans and place in covered casserole dish along with 3 tablespoons water. Microwave on High* for 4 minutes. Stir and continue microwaving on High for an additional 4 minutes. Let stand for 2 minutes. Drain water from sun-dried tomatoes and diceinto small pieces. Mix tomatoes with salad dressing in a small bowl. Set aside.Drain beans. Pour dressing over beans and toss.

    Makes 4 to 6 servings.
