Navy Bean Soup

  • 2 cups Navy beans
  • 1 Hambone
  • 2 quarts Water
  • 1 medium Onions, chopped
  • 1/2 cup Carrots, chopped
  • 1/2 teaspoons Basil
  • 1/2 teaspoons Oregano
  • 1 Garlic cloves
  • Soak beans overnight in water to cover (or, bring to boil over medium heat, boil for 3 min., then cover and simmer on low for 20 min.).

    Next day, add chopped onion, carrots, hambone. Simmer 3-4 hrs. (crockpot 6-8 hrs.) until broth beginsto thicken. Remove ham from bone and chop, returning to pot. Add herbs and simmer another 2 hrs., stirring occasionally.
