Lima Beans with Feta Cheese

  • 1 pound Lima beans, canned or fresh
  • 10 tablespoons Olive oil
  • 1 large Onion, sliced
  • 2 cloves Garlic, finely minced
  • 1 pounds Tomatoes, seeded and diced
  • 1 teaspoons Oregano, dried
  • 1 Bay leafs
  • ~ Salt and pepper to taste
  • 6 ounces Feta cheese, crumbled
  • 1 tablespoons Italian parsley, chopped
  • If fresh, soak beans over night.

    Saute onion & garlic. Add tomatoes, beans,oregano, bay leaf. Add enough water tobarely cover beans. Gently simmer until beans are just tender, about 1-1 1/2 hrs. Add salt & pepper during last 30 min.

    If too soupy, boil off excess liquid. Cool. Transfer bean mixture to casserole & top with feta cheese and chopped parsley. Bake until feta melts, about15-20 min.
