Tex-Mex Catfish

  • 1 can Tomatos, crushed
  • 4 Scallions, chopped
  • 1/4 cup Lime juice
  • 3 tablespoons Green chilies, chopped
  • 1 Garlic cloves
  • 4 Catfish fillets
  • 3 tablespoons Cilantro, chopped
  • Combine all ingredients (except fish and cilantro) in nonstick skillet over medium high heat. Season with salt & pepper to taste. Mix thoroughly and bring toboil. Reduce heaet to medium low and simmer 10 mon.

    Add fish to skillet. Cover and simer 10 min. or until fish flakes. Serve fish topped with tomato sauce and cilantro.
