Fettuccine with Walnuts & Avocado

  • 2 tablespoons Olive oil
  • 1/4 cup Tarragon vinegar
  • 1/4 cup Basil, fresh
  • 2 tablespoons Green onion, minced
  • 1/4 cup Bell peppers
  • 1/2 cup Tomatoes, sun-dried
  • 2 tablespoons Walnuts, chopped
  • 1 Avocado, pitted, peeled, diced
  • 1 pound Fettuccine
  • In large bowl, combine olive oil, vinegar, basil, green onions, bell pepper, sun-dried tomatoes, walnuts, and half of diced avocado. Toss ingredients so they are evenly coated with oil & vinegar.

    Cook pasta in boiling water until al dente. Drain pasta, turn it into salad bowl, mix with vegetables. Garnish with remaining avocado. Sprinkle with grated Parmesan cheese and serve.
