Lentil and Feta Salad with Basil

  • 1 cup Lentils
  • 1/3 cup Red pepper, chopped
  • 1/3 cup Green pepper, chopped
  • 2 tablespoons Basil, fresh
  • 3 ounces Feta cheese, crumbled
  • 1 1/2 tablespoons Rice vinegar
  • 1 tablespoon Lemon juice
  • 2 tablespoons Olive oil
  • 1/4 teaspoon Salt
  • ~ Lettuce leaves
  • ~ Tomato slices
  • Cook lentis in 2 qts. boiling water until soft, not mushy; about 30 min.

    Mix lentils in serving bowl with bell peppers, basil, & feta.

    Mix dressing ingredients; pour over lentil mixture.

    Serve over lettuce leaves; garnish with tomato slices.
